Fermented in a mix of barrel, stainless steel tank and concrete egg. With an elevage of 12 months and around 4 years on lees.
Richard & Joy Morris established the estate around 2006 with first plantings over two years. Previously unused virginal soil allowing for a great starting point for conscientious biodynamic viticulture. Their son David worked with them for a period of time also, making the wines from 2011 to 2019. Within that tenure 2015 saw the construction of their modern winery which is the largest straw bale structures globally! Other than the Triomphe which is allowed to be wild the rest of the now 12ha are unusally trellised using Geneva double curtain method, great for cooler, wetter climates as allows fantastic air flow alongside good canopy management.
