"Friday". Co-ferment on Fiano skins for 2 weeks. Fermentation finished in Inox and then rests 12 months in old oak.
This is a collaborative winery with 4.5 hectares of leased vines in the Cilento hills, a couple of hours from Naples that are farmed organically. These are naturally made wines with nothing added save for a small amount of SO2.
One of the partners is Jack Lewens of Shoreditch Michelin-starred restaurant Leroy, and the other is Bruno de Conciliis of Viticoltori de Conciliis. There’s also involvement from Lewins’ Leroy partner Ed Thaw, Michael Sager (Sager & Wilde and Fare), Jackson Boxer (Brunswick House and St Leonard’s) and Stevie Parle (Rotorino, Craft London and Palatino).
