Fabio Bortolomei grew up in Scotland to Italian parents, moved to Madrid over 20 years ago, and not long afterwards started experimenting making wine out of friends’ garages. Winemaking was a family tradition learnt in the Tuscan countryside whilst visiting family, but other than that he had to teach himself everything from scratch. An entirely ‘intuitive’ winemaker, in 2013 he finally man- aged to secure his own bodega, a gargantuan abandoned co-operative in the village of El Tiemblo which he now rents with friend and fellow winemaker Daniel Ramos.
Fabio works with several indigenous and often under-represented grape varieties such as Doré, Malvar, Airén, Albillo and Chelva as well as the more common Sauvignon Blanc, Garnacha and Tempranillo. Variety and experimentation may just be what drives Fabio, every year he tries new and different winemaking methods. He vinifies using amphora, stainless steel, plastic and oak whatever he can get his hands on. Each year we can be sure to experience something new and exciting emerge from the bodega.
